Willunga 100 `The Tithing` from McLaren Vale, Australia, is a captivating Red still, dry wine crafted from Grenache. The fruit is hand-harvested, destemmed, and whole berry sorted into stainless steel open fermenters, undergoing 10 days on skins with gentle plunging. It then matures on lees in French oak puncheons (10% new) to build complexity and generosity. This wine offers a dark, deep, and rich profile, with an earthy nose, delicate aromatics, and a palate of dark cherry and aniseed, complemented by layers of fine French oak and spice. This versatile wine pairs wonderfully with roasted lamb or mature cheeses.

Vinification
The fruit was hand harvested, destemmed and whole berry sorted into stainless steel open fermenters. The whole berry ferment spent 10 days on skins, during which time it was plunged and gently pumped over to ensure optimum extraction, while maintaining the delicate aromatics. The wine was basket pressed off the skins before maturation on lees in French Oak puncheons (10% new oak, 10% second use, remainder old) to build complexity and generosity.
