A Mano `Imprint` Primitivo Appassito from Puglia, Italy, is a still red, off-dry wine crafted from Primitivo grapes. The Primitivo grapes undergo a five-week drying process, typical of the Appassito style, concentrating their flavours. This results in a rich and powerful expression, with intense aromas of ripe dark fruit, crushed raspberries, plums, and Mediterranean spices. On the palate, it is full-bodied, offering a great concentration of ripe, rounded fruit. It pairs wonderfully with rich pasta dishes or mature cheeses. This wine is also suitable for vegans and vegetarians.

The Primitivo grapes were dried for five weeks. On arrival at the cellars, the grapes were pressed, destemmed and cooled to 18°C and the must was allowed to ferment at its own pace. After racking in mid-November, the wine remained in an underground cement tank where the temperature did not exceed 10°C until being bottled under Stelvin.
This Appassito-style Primitivo offers intense aromas of ripe dark fruit, crushed raspberries, and plums, complemented by Mediterranean spices. It is a full-bodied wine, delivering a rich concentration of ripe, rounded fruit on the palate.
Serve at 16-18°C. Decanting for 30-60 minutes will enhance its rich character.
