Wild Earth Central Otago Riesling from New Zealand is a superb still White wine, crafted to be just off-dry. This elegant Riesling is hand-harvested from a single vineyard near the Waitaki River, where limestone-rich soils impart beautiful minerality and focus. The fermentation is carefully stopped to achieve a perfect balance of residual sugar and acidity, resulting in a vibrant wine with crisp citrus and green apple notes, a distinctive wet stone mineral character, and a long, refreshing finish. This versatile wine pairs wonderfully with light seafood, delicate poultry dishes, or even mild spicy cuisine.

Vinification
The Riesling is hand-harvested from a single vineyard near the Waitaki River. The Waitaki Valley, in North Otago, is renowned for its limestone rich soils which give beautiful minerality and focus to the wine. The fermentation was stopped at the perfect balance of residual sugar and acidity resulting in a just slightly off-dry wine with a long dry, crisp, and mineral finish.
