Valdespino Manzanilla 'Deliciosa' Pago de Miraflores from Sanlucar de Barrameda, Spain, is a superb White Fortified Dry wine crafted from Palomino grapes. Fermented in temperature-controlled stainless steel tanks, it undergoes five years of biological ageing under a thick 'flor' yeast layer in the cooler Sanlucar de Barrameda climate, imparting exceptional freshness and a distinctive saline character. This vegan and vegetarian-friendly sherry offers delicate yeasty and bready notes with a hint of flower blossom, leading to a very dry, crisp palate and a refreshing, slightly saline finish. It pairs beautifully with a range of appetizers and seafood.

Vinification
The must is fermented in temperature controlled stainless steel tanks to preserve crisp, fresh fruit flavours. At this stage is has reached between 10.5% and 12% alcohol, and is then fortified to 15% and the 'flor' yeast layer is encouraged to develop, protecting the wine from oxygen and transforming its components. The Manzanilla bodega is situated in Sanlucar de Barrameda, where the climate is cooler than inland Jerez, and as a result the 'flor' layer is thicker, offering more protection to the wine and therefore more freshness and saline character. The wine ages biologically, spending five years under the 'flor', and producing a more delicate style of Sherry.

This dry, crisp Manzanilla Sherry offers delicate yeasty and bready notes on the nose, complemented by a hint of flower blossom. The palate is fresh and very dry, culminating in a distinctive saline finish.
