Trinity Hill `The Trinity` from Gimblett Gravels, New Zealand, is a superb Red still dry wine, a Merlot-dominant blend with Cabernet Franc, Cabernet Sauvignon, Petit Verdot, and Malbec. Crafted with gentle destemming, daily pumping over, and extended skin maceration, it ages for 15 months in French oak and stainless steel. This impressive wine offers perfumed aromas of leather, plum, and spice, leading to a rich, supple palate with ripe tannins and notes of plum, blackcurrant, and baking spices. It pairs beautifully with beef, lamb, and mature hard cheeses.

Individual vineyard blocks were harvested separately and then gently destemmed prior to fermentation. Subsequently, gentle daily pumping over of the skins during fermentation helped extract a soft, complex structure. Following fermentation, the skin maceration was extended for up to four weeks to further integrate and soften the tannins. The parcels spent 15 months ageing in a combination of small French oak barrels and stainless steel tanks, before blending and bottling.
This impressive Red wine offers perfumed aromas of leather, plum, and spice. On the palate, it is rich and supple, revealing notes of plum, blackcurrant, and baking spices, all supported by ripe tannins and an elegant finish.
Serve at 16-18°C. Decant for 30 mins to enhance flavours.
