Trinity Hill `The Gimblett` from Gimblett Gravels, New Zealand, is a powerful and richly structured Red still dry wine. This blend of Cabernet Sauvignon, Cabernet Franc, and Tempranillo is matured for 18 months in French oak, with 53% new oak, imparting complex notes. It boasts deep purple hues and aromas of blackberry, bramble, cedar, liquorice, vanilla, and toast. The palate reveals pure blackcurrant flavours, savoury oak, fine-grained tannins, and juicy acidity, leading to a concentrated, textural finish. A superb choice for roasted meats or mature cheeses.

Each variety was harvested from individual blocks in two distinct vineyards, de-stemmed and fermented separately. All parcels were pumped over once daily to aid optimum colour and tannin extraction. Total time on skins, including post-fermentation maceration, ranged from 15 to 21 days. This helped to improve the texture of the tannins while softening and stabilising the individual wines. Each parcel was matured either in new or seasoned 225-litre French oak barriques for 18 months before being blended in November 2021 and bottled in February 2022. The percentage of new oak in the final blend was 53%.
This powerful and richly structured red blend offers lovely blackberry aromatics. On the palate, pure blackcurrant flavours are complemented by savoury oak and fine-grained tannins, leading to a concentrated and satisfying finish.
Serve at 16-18°C. Decant for an hour to allow its rich flavours to unfold.
