Vinification
The Sangiovese grapes were all hand-picked and hand-selected on the sorting table. In 2020, the harvest took place from September the 17th until the 2nd of October. The grapes underwent fermentation at controlled temperature (between 24 and 28 °C) with daily pumping over and délestages at the beginning and in the middle of fermentation. Maceration on the skins lasted from 23 to 25 days and it was followed by a spontaneous malolactic fermentation in climate-controlled steel tanks. After an ageing period of 18 months in Slavonian oak barrels (75% of the blend) and in French oak (new and 2nd use), the wine was left to refine in the bottle for additional 12 months.
