Poggio al Tesoro `Cassiopea` Bolgheri Rosato from Italy is a delightful dry Rosé wine. Crafted from Cabernet Franc and Merlot grapes, this still wine undergoes gentle pressing of whole bunches and fermentation in stainless steel tanks at controlled temperatures of 14-16°C for 20-25 days. Crucially, no malolactic fermentation occurs, preserving its vibrant freshness. The wine then rests on fine lees in stainless steel until bottling, adding texture and complexity before a month of bottle ageing. It presents a fresh, lively perfume of fragrant spices and woodland berries, leading to a crisp, beautifully structured and easy-drinking palate. This versatile rosé pairs wonderfully with light dishes and appetizers.

Vinification

Whole bunches were gently pressed and fermented in stainless-steel tanks at controlled temperatures of 14ºC to 16ºC, for around 20 to 25 days. No malolactic fermentation was allowed to take place, and the wine remained in stainless-steel tanks on the fine lees until bottling, to add texture and complexity. The wine was then aged for a further month in bottle prior to release.

This salmon-pink rosé offers a fresh and lively perfume of fragrant spices and woodland berries. It delivers a crisp flavour and beautifully structured palate, making it an easy-drinking and appealing wine.

Serving recommendation

Serve chilled at 10-12°C, no decanting required. Enjoy young for optimal freshness.
