Pegaso `Zeta` from Cebreros, Sierra de Gredos, Spain is a Red still dry Garnacha, crafted from 60-year-old bush vines grown on slate and granite soils. The hand-harvested grapes undergo fermentation with indigenous yeasts in large foudres, followed by six months in oak barrels and a further six months in stainless steel tanks, ensuring minimal intervention to preserve the purest expression of site. It offers a softer palate with crunchy red fruit characters and herbaceous undertones, showcasing finesse and delicate tannins. This versatile wine pairs beautifully with poultry, cured meats, or mild cheeses.

Vinification
The hand harvested grapes were destemmed and crushed, before fermentation with indigenous yeasts in large, used, open-top 5000L foudres was carried out. The wine was then aged six months in 500L oak barrels of various origins and ages, followed by a further six months in stainless steel tanks. It was then gently fined and bottled, unfiltered.

The Pegaso `Zeta` Garnacha offers a delightful expression of crunchy red fruit characters, complemented by aromatic herbaceous undertones. It presents a softer palate with finesse and delicate tannins, making for an elegant and approachable red wine experience.
Serving recommendation
Serve at 16-18°C; decant for 30 minutes to an hour to enhance its aromatic complexity.
