Mount Pleasant `Elizabeth` Cellar Aged Hunter Valley Semillon from Hunter Valley, New South Wales, Australia is a superb dry white still wine crafted from Semillon grapes. Hand-picked in the early morning, only the finest free-run juice undergoes cold fermentation before being aged for five years in bottle prior to release. This meticulous process results in a wine where fresh lemon and lime notes harmoniously integrate with honey toast, fresh hay, vanilla, and lanolin from bottle age. The palate is rich, complex, and textural, yet retains brilliant acidity. A vegetarian-friendly choice, it pairs beautifully with rich fish or poultry dishes.

The Semillon grapes were hand picked in the early morning to ensure the fruit was cool. Grapes were then destemmed and pressed. Only the first and finest free run juice was settled and inoculated for cold fermentation. The resulting wine was chilled and fined before bottling. It was then aged for 5 years in bottle before release.
This exquisite dry white wine offers a harmonious integration of fresh lemon and lime, complemented by notes of honey toast, fresh hay, vanilla, and a hint of lanolin from bottle age. The palate is rich, complex, and textural, yet retains a brilliant acidity that promises further evolution.
