Montes Outer Limits Apalta Vineyard Carignan/Grenache/Mourvèdre from Apalta DO, Chile, is a vibrant Red still dry wine. This classic Rhône blend of Carignan, Grenache, and Mourvèdre is crafted with indigenous yeasts, undergoing fermentation and ageing in a combination of ovoid concrete and stainless steel tanks. It offers an intense carmine-red colour with aromas of ripe red and blue berries, sweet spice, and a liquorice-scented intensity. The palate is vibrant with soft tannins and a medium body, leading to a long-lasting finish. This versatile wine pairs beautifully with roasted meats or mature cheeses.

Vinification
The grapes were hand-harvested in 10-kg boxes and underwent rigorous selection upon arrival before destemming. The selected fruit was transferred into tanks, where fermentation proceeded with indigenous yeasts. Low-temperature fermentation at 22-25°C lasted 8-10 days with manual punch-downs and gentle pump-overs. Post-fermentation maceration extended 3-5 days to enhance structure and tannin development. Following pressing, 50% of the wine was transferred to ovoid concrete tanks for malolactic fermentation and 12-month ageing, while the remainder was maintained in stainless steel tanks. The wine was membrane-filtered before bottling to ensure optimal bottle longevity.
