Matthieu Barret `Petit Ours Blanc` Côtes-du-Rhône, France, is a vibrant still White wine crafted from Roussanne and Marsanne grapes. This dry wine, farmed organically and biodynamically, offers an expressive nose of wildflowers and white peach. The palate is bright with generous stone fruit and a round texture, beautifully balanced by refreshing acidity, leading to a pleasing aromatic finish. Hand-harvested and fermented with indigenous yeasts in stainless steel, it ages for 10 months to preserve its freshness. This vegan and vegetarian-friendly wine is versatile with poultry, lean fish, or mild cheeses.

Vinification
The grapes were hand-harvested early in the harvest and directly pressed, with the juice cold-settled for 18 hours prior to fermentation with indigenous yeasts. Fermentation lasted two weeks with three aerations of the juices in stainless steel tanks. The wine was aged for 10 months in stainless-steel tanks with no racking. Filtration and addition of sulphites was carried out before bottling.
