Vinification
The grapes were destemmed, but not crushed. The whole berries were fermented using indigenous yeasts in diamond-shaped concrete eggs and larger concrete vats for optimal expression of the variety and site. The wine was then aged for 11 months in the same concrete vessels, followed by only minimal filtration and very minimal sulphur additions at bottling.
