Lagar de Pintos `3000 Cepas` Rías Baixas, Spain, is a captivating dry white wine crafted from 60-year-old Albariño vines. Fermented with indigenous yeasts and aged on lees, initially in stainless steel and then for 12 months in old French oak barrels, this wine avoids malolactic fermentation to preserve its vibrant freshness. It reveals a complex bouquet of zesty citrus, ripe fruit, aniseed, and delicate blossom, beautifully complemented by subtle toasted oak notes. The palate is concentrated and textured, showcasing grapefruit, a distinctive minerality, and a saline finish. This vegan-friendly wine is an excellent accompaniment to shellfish or lean fish.

Vinification
Each of the parcels were fermented separately using indigenous yeasts and aged on its lees in stainless-steel tanks for seven to eight months. Marta avoids malolactic fermentation which helps to retain the fresh, lively fruit that characterises this wine. The wine was then gently racked to 500 litre French oak barrels for 12 months before bottling.
