La Giustiniana `Montessora` Gavi di Gavi Gavi di Gavi DOCG from Gavi, Italy, is a delightful dry white still wine crafted from the Cortese grape. It undergoes a cool fermentation in stainless steel tanks, remaining unoaked to preserve its pure character. This wine offers fresh notes of flint and flowers, with beguiling aromas of stone fruit and lime peel. On the palate, it is intense and concentrated, revealing pure fruit flavours of peach and lime, leading to a long, mineral finish. A versatile choice, it pairs beautifully with lean fish, shellfish, and pasta dishes. This wine is vegan and vegetarian friendly.

Vinification
The grapes were gently pressed upon arrival at the winery. They then underwent a cool fermentation in temperature-controlled, stainless steel tanks at 16°C, which lasted two weeks. Unoaked, the wine was bottled in the spring following the harvest.
