Jean-Claude Boisset, Mâcon-Igé `Sous La Roche` Mâcon-Igé AOC is a still, dry White wine from France, crafted from 100% Chardonnay grapes. The handpicked, whole bunches are gently pressed, followed by a long fermentation with indigenous yeasts. The wine then ages for 11 months in demi-muids barrels, with 27% new French oak, to enhance its minerality and complexity. It reveals vibrant aromas of ripe lemon and bright pineapple, leading to a fresh palate with a smooth texture and a long, delicately saline finish. This versatile wine pairs beautifully with poultry, lean fish, or mild cheeses. This wine is suitable for both vegans and vegetarians.

Vinification
After being handpicked, the whole bunches of grapes weregently pressed for 2½ hours. The temperature of the must wasbrought down to 12°C then was immediately transferred to barrels (demi-muids) with no settling to preserve a maximum of lees. Long fermentation using indigenous yeasts for added complexity and freshness. The wine is then aged on demi-muits barrels, for 11 months with no racking or stirring to bring out all of it's minerality. A proportion of 27% new French oak barrels.
