Jean-Claude Boisset Bourgogne Pinot Noir `Les Ursulines` from Bourgogne, France is a captivating still dry red wine crafted entirely from Pinot Noir grapes. The vinification process involves cool maceration and fermentation with indigenous yeasts, followed by seven months of ageing on lees in lightly toasted French oak barrels, with 10% new oak, adding complexity and structure. It reveals intense aromas of forest fruits married with a subtle toastiness. The palate is graced with velvety tannins and a mouthwatering acidity, carrying vibrant fruit flavours to a lingering finish. This versatile wine pairs wonderfully with poultry, mushrooms, or mild cheeses and is suitable for vegans and vegetarians.

Vinification

Upon arrival at the winery, the bunches went through a rigorous triage on the sorting table. The grapes were then destemmed but not crushed, and gravity-fed into stainless-steel vats. Maceration lasted 20 days, including four days of pre-fermentation cold maceration at 12°C to extract aroma and colour. Fermentation took place with indigenous yeasts with occasional punching down of the cap. Following fermentation, the wine was aged on lees for seven months in lightly toasted French oak barrels (10% new) before being lightly filtered and bottled.

This elegant red wine offers intense aromas of forest fruits, beautifully complemented by a subtle toastiness from oak ageing. On the palate, it presents a harmonious balance of vibrant fruit, velvety tannins, and a refreshing acidity that leads to a lingering finish.

Serving recommendation

Serve at 14-16°C. Decant for 30 minutes to allow its forest fruit aromas to fully develop.
