Jean-Claude Boisset Aligoté `Les Moutots` Bourgogne Aligoté AOC, Burgundy, France is a vibrant dry white wine crafted from Aligoté grapes. Gently whole-bunch pressed and fermented with indigenous yeasts, it undergoes 18 months of oak ageing in 450-litre French oak demi-muids, with 30% new oak. This process imparts zesty citrus, crisp apple, and delicate white floral aromas, complemented by a subtle savouriness. Vinification
Upon arrival at the winery, the Aligoté grapes were gently whole bunch pressed for 2.5 hours. The temperature of the must was brought down to 12°C and it was transferred to 450-litre French oak demi-muids for fermentation with indigenous yeasts. Following fermentation, the wine was aged for around 18 months in lightly toasted French oak demi-muids, 30% of which were new.
