Herdade do Peso `Revelado` Alentejo DOC, Portugal, is a still, dry red (ruby) wine crafted from a blend of Alicante Bouschet, Cabernet Sauvignon, and Touriga Nacional. Aged for 12 months in French oak barriques, this vegan and vegetarian-friendly wine boasts appealing aromas of black cherries, black plums, and a savoury hint of toast and nutmeg, with subtle earthiness. The palate is full-bodied, offering delicious spiced berry flavours, ripe, round tannins, and an elegant acidity that leads to a lingering finish. It pairs beautifully with roasted lamb, mature cheeses, or rich game dishes.

Vinification
After hand picking, the Alicante Bouschet, Cabernet Sauvignon and Touriga Nacional grapes were destemmed and gently crushed. Fermentation took place in stainless-steel tanks at controlled temperatures of 28°C for 12 days, with regular pump overs carried out. Following malolactic fermentation, the wine was aged in French oak barrels for 12 months, 10% of which were new oak. The wine was lightly fined prior to being bottled.
