Henschke `Henry's Seven` from Barossa Valley, Eden Valley, Australia is a superb dry red still wine. This unique blend of Shiraz, Grenache, Mataro, and Viognier pays tribute to Henry Evans, who planted the first vineyard in 1853, highlighting the historical introduction of southern French and Spanish varieties. The Viognier is co-fermented with Shiraz, while Grenache and Mataro are fermented separately, then matured for 8 months in seasoned French oak hogsheads. It offers fragrant aromas of raspberry, plum, boysenberry, black pepper, and vanilla, leading to a rich, supple palate of dark plum, cherry, and crushed blackberry, balanced by vibrant acidity and fine, savoury tannins. A versatile choice, it pairs wonderfully with roasted meats or mature cheeses. This wine is vegan and vegetarian friendly.

Vinification
The Viognier is co-fermented with Shiraz, while the Grenache and Mataro are fermented separately. The wine is then matured in 100% seasoned French oak hogsheads for 8 months prior to blending and bottling.
