Gallina de Piel `Mimetic` from Calatayud, Spain, is a vibrant Red still wine, a dry expression crafted from 40 to 80-year-old Garnacha vines grown on deep, red clay soils at high altitudes. Aged in concrete for six months after fermentation with indigenous yeasts, this wine offers a bright, juicy profile. It presents fragrant aromas of black plum, blueberry, and thyme, leading to a palate that is vibrant and juicy with lively acidity underpinning an opulent fruit profile and ripe tannins. Vinification
The grapes underwent cold maceration for three days, in order to gently extract colour and tannins. Fermentation took place in concrete tanks for two weeks using indigenous yeasts. The wine then underwent full malolactic fermentation and spent six months ageing on fine lees in concrete tanks, with periodic bâtonnage to enhance the wine's supple mouthfeel.
