Gabriëlskloof `Amphora` Sauvignon Blanc from Walker Bay, Bot River, Cape South Coast, South Africa is a distinctive still, dry white wine crafted from Sauvignon Blanc grapes. Fermented and aged for seven months in porous clay amphorae using indigenous yeasts and whole bunch pressing, this wine offers a unique expression of the varietal. It presents a textured and complex profile with aromas of white pear, yellow peach, blackcurrant leaf, and a hint of smoke. The silky, layered palate reveals mouth-watering acidity alongside notes of grapefruit rind, salted almond, and wet stone. This vegan and vegetarian-friendly wine pairs beautifully with lean fish, shellfish, or goat cheese.

Vinification
The Sauvignon Blanc grapes were whole bunch pressed and fermented using indigenous yeast in locally-made clay amphorae ranging from 500 to 860L. The surface is porous, with no lining inside, allowing for light micro-oxidation during the maturation process and enhancing the wine's mouthfeel. The wine was aged in the clay amphorae for seven months on gross lees without any additions and only minimal SO2 addition just prior to bottling.

This atypical Sauvignon Blanc offers a textured and complex profile. Aromas of white pear, yellow peach, blackcurrant leaf, and a hint of smoke lead to a silky, layered palate with mouth-watering acidity, grapefruit rind, salted almond, and wet stone notes.
Serving recommendation
Serve chilled at 12-14°C. Decanting for 30 minutes can enhance its complex aromas and texture.
