Fairview, Charles Back MCC Brut from Paarl, South Africa, is a vibrant White Sparkling dry wine. Crafted using the traditional Méthode Cap Classique, it undergoes secondary fermentation in the bottle and extended lees ageing, resulting in subtle autolytic flavours and a richer texture. Bright aromas of green apple, fresh flowers, and brioche lead to a delightfully creamy palate bursting with tart apple, lime zest, and quince flavours, complemented by a lingering freshness and crunchy acidity. This versatile sparkling wine is perfect as an aperitif or paired with light canapés and shellfish.

Vinification
The grapes were hand picked in the cool morning and transported into crates to ensure they were kept in the best possible condition. The fruit was then transferred to the press by hand and gently whole-bunch pressed. Only the free run juice was used, which was then transferred to stainless steel tanks for fermentation. The blended wine was left on lees in tanks for seven months before bottling for secondary fermentation, which took place in the bottle under crown cap (traditional Méthode Cap Classique). The wine was left to mature on the lees before it was disgorged, resulting in subtle autolytic flavours and richer texture.
