Dreissigacker `Vintages` St. Laurent/Pinot Noir from Rheinhessen, Germany, is a certified organic still red (Rotwein) wine, a harmonious dry blend of St. Laurent and Pinot Noir. This innovative multi-vintage project, inspired by Champagne's cellar masters, showcases how still wines gain depth and complexity through skilful blending. Hand-harvested grapes were fermented with indigenous yeasts, then aged for three years in 225-litre barriques, two-thirds new. The wine offers an elegant nose of juicy berries, dark cherries, and plums, beautifully integrated with toasty oak aromas. The palate reveals a well-balanced tannic structure and a silky texture, offering refined depth. It pairs wonderfully with roasted poultry or mature cheeses.

Vinification

Jochen's latest project, 'Vintages', reinforces his reputation for innovation. Inspired by the meticulous work of the cellar masters in Champagne, Jochen is determined to showcase that still wines can gain depth and complexity from the skillful blending of different, but complementary, vintages. `Vintages` Red is a harmonious blend of organic grown St. Laurent and Pinot Noir from 2021 and 2022. A mixture of whole bunches and destemmed grapes were harvested by hand and fermented separately with indigenous yeasts in temperature-controlled stainless steel tanks. Following fermentation, the wine underwent ageing in 225 litre barriques, two thirds new, for three years before the final blending and bottling.

Serving recommendation
