Dominio do Bibei `Lalama` Ribeira Sacra DO from Ribeira Sacra, Spain, is a captivating still red (Tinto) wine, crafted dry from a blend of Mencía, Souson, Mouraton, Brancellao, and Alicante Bouschet grapes. Fermented with indigenous yeasts in French barrels and aged in French oak, this wine offers a vibrant, slightly spicy nose with ripe black cherries, blueberries, and wild strawberry, beautifully complemented by peppery spices and a warm mocha character. The palate is fresh and texturally inviting, showcasing sappy redcurrant freshness. This vegan and vegetarian-friendly wine pairs wonderfully with a range of dishes, from cured meats to mature cheeses.

Vinification

The grapes were hand picked into 10kg cases. The first selection took place in the vineyard, followed by further sorting on arrival at the winery. The grapes were then destemmed and vatted by a gravity-led system. Cold pre-fermentation maceration took place, followed by fermentation with indigenous yeasts in French barrels. Punch downs were carried out daily, and post-fermentation maceration took place for several days. Manual run off and spontaneous malolactic fermentation then took place in French barrels. The wine was then aged in French oak barrels followed by a period of ageing in bottle.

Flavour profile

This light and fragrant red wine offers a vibrant and slightly spicy profile. It brims with aromas of ripe black cherries, blueberries, dark plum, and wild strawberry, beautifully contrasted by peppery spices, toasty oak, and a warm mocha character. The palate is fresh, texturally inviting, and showcases sappy redcurrant freshness.

Serving recommendation

Serve at 14-16°C, a brief decant can enhance its fragrant fruit.
