Domaine Vico `Le Bois du Cerf` Rouge from Corsica, France, is a vibrant still red (rouge) wine, dry in style, crafted from a blend of Niellucciu and Sciaccarellu grapes. Hand-harvested, the grapes undergo fermentation with indigenous yeasts in concrete tanks, followed by 45 days of post-fermentation maceration and 12-18 months of ageing in concrete to build depth. It offers pure notes of red and black cherries, aromatic herbs, and dried rose, leading to a juicy palate enhanced by spice and rosemary, culminating in a persistent finish. This organic-certified and vegetarian-friendly wine pairs beautifully with roasted lamb or mature cheeses.

The grapes were harvested by hand allowing for attentive selection in the vineyard. Upon arrival at the winery, the grapes were destemmed and crushed and transferred to concrete tanks where they underwent fermentation with indigenous yeasts. Following post-fermentation maceration which lasted 45 days for further extraction of tannins and flavour, the wine was aged for 12-18 months before bottling without fining and with minimal filtration
