Domaine du Château Philippe le Hardi Bourgogne Pinot Noir Vieilles Vignes Bourgogne AOC from Burgundy, France, is a delightful still Red wine (rouge) that is dry and crafted entirely from Pinot Noir grapes. This wine underwent a five-day cool maceration, followed by fermentation in stainless-steel tanks, and was then aged for 12 months, with 10% in French oak barrels and the rest in stainless steel. It presents a bright ruby colour, brimming with red cherry and raspberry fruit, subtle hints of spice and violet. Velvety tannins and lively acidity lead to a juicy finish. This vegan and vegetarian-friendly wine pairs beautifully with poultry, mushrooms, or lamb.

Vinification

Upon arrival at the winery, the Pinot Noir grapes were destemmed and crushed and underwent a five day cool maceration on the skins. Fermentation took place in stainless-steel tanks and lasted for two weeks with twice daily pump overs. Following fermentation, the wine was aged for 12 months, 10% of the blend was aged in French oak barrels, the remainder was kept in stainless-steel, before the final blend was assembled and bottled.

This vibrant ruby red Pinot Noir offers a delightful bouquet of red cherry and raspberry, intertwined with delicate notes of spice and violet. On the palate, it presents velvety tannins and lively acidity, leading to a juicy, flavourful finish.

Serve at 12-14°C; decanting for 30 minutes will enhance its aromatic complexity.
