Domaine du Château Philippe le Hardi `Les Foires` Bourgogne Hautes-Côtes de Beaune AOC, France, is a delightful dry White (Blanc) still wine crafted from 100% Chardonnay. Fermented in temperature-controlled stainless-steel tanks and aged on fine lees with 50% in French oak barrels, it offers remarkable concentration. Expect aromas of ripe lemon, apricot, floral hints, and toasted notes. The palate is fleshy with vibrant acidity, carrying complex flavours to a lingering finish, complemented by a lovely minerality from its limestone soils. This vegetarian-friendly wine pairs beautifully with poultry, lean fish, and mild cheeses.

Vinification
Upon arrival at the winery, the Chardonnay grapes were very gently pressed in a pneumatic press and the must was left to settle before being racked off the sediment and moved to stainless-steel tanks. Fermentation took place in temperature-controlled stainless-steel tanks at controlled temperatures of 20 to 22°C. Following fermentation the wine was aged on fine lees, 50% of the blend in French oak barrels, 50% of the blend in stainless steel.

This dry white Chardonnay offers a delightful bouquet of ripe lemon, apricot, and delicate floral notes, complemented by subtle toasted undertones. On the palate, it is fleshy with a vibrant acidity that carries its complex flavours to a lingering finish, showcasing a lovely minerality.
