Vinification
Caroline and Hervé embrace a minimal intervention approach in the winery. The Chenin Blanc for the Saumur Blanc hails from 30-year-old vines planted on sandy clay and limestone soils. For the ‘Les Rouères’ Saumur Blanc, the duo recognised the potential of a 40-year-old plot of Chenin Blanc and decided to vinify it as a single-vineyard wine. Fermented and aged in new four-hectolitre French oak barrels, ‘Les Rouères’ is left on its fine lees for 12 months to add richness and texture.
