The grapes were harvested by hand, sorted twice and totally destemmed before being crushed. The berries were then slowly and gently pressed at low pressure, to maintain the freshness and delicate red fruit character, before undergoing cold settling. Alcoholic fermentation took place with natural yeasts in stainless steel. The wine were naturally decanted by gravity before being aged on fine lees in stainless steel until bottling.
