The estate, benefiting from fresh sea breezes, employs sustainable methods, with grapes mechanically harvested at night and fermented in temperature-controlled stainless steel to preserve freshness. This wine presents an expressive and complex nose of ripe peach and nectarine, alongside a distinct minerality. The palate is fresh and fruity, revealing vibrant lemon and lychee flavours that extend into a long, satisfying finish. It pairs beautifully with lean fish, shellfish, or light salads. Vinification
The grapes were harvested mechanically at night to preserve the delicate aromatics of the fruit. The grapes were destemmed and gently crushed before being cooled, followed by a gentle pressing. Fermentation took place in stainless steel at controlled temperatures, and the wine was kept on fine lees for additional freshness before being bottled the following spring.
