Domaine Corsin Saint-Véran `Vieilles Vignes` Saint-Véran AOC, France, is a superb dry white (Chardonnay) still wine crafted from Chardonnay grapes. After hand harvesting, the grapes are gently pressed and fermented in temperature-controlled stainless-steel tanks. 40% of the blend then undergoes 10 months of ageing in French oak barrels (20% new oak), with regular lees stirring to build texture. This wine offers complex aromatic notes of white flowers and hazelnut, leading to a round and rich palate defined by vibrant lemon zest, yellow peach, apricot, and a distinct mineral character, all lifted by bright acidity. It pairs beautifully with poultry, rich fish, or mild cheeses. This wine is vegan and vegetarian friendly.

Vinification
After hand harvest the grapes arrived at the winery where they were gently pressed in a pneumatic press. Fermentation took place in temperature-controlled, stainless-steel tanks. 40% of the blend was aged in French oak barrels (20% new oak) for 10 months, the rest was kept in stainless-steel. The fine lees were stirred regularly to add texture to the palate.
Flavour profile
This elegant white wine offers a complex bouquet of white flowers and subtle hazelnut. On the palate, it is round and rich, revealing vibrant notes of lemon zest, yellow peach, and apricot, all beautifully balanced by a bright acidity and a distinct mineral character.
Serving recommendation
Serve chilled at 12-14°C. A brief aeration before serving will enhance its complex aromas.
