Domaine Cauhapé `L'Éclipse` Vin de France, Jurançon, France, is a captivating dry white (blanc) still wine crafted from a unique blend of Gros Manseng and Camaralet grapes. From the foothills of the Pyrenees, this wine undergoes five months of ageing on its lees, contributing to its round and supple texture and adding complexity. It presents pronounced aromas of white peach and vibrant citrus, complemented by gentle spice notes. The palate delivers intense exotic fruit flavours and subtle brioche hints, culminating in a long, balanced finish. This versatile wine pairs beautifully with a range of poultry dishes or mild cheeses.

The wine is a unique blend of 60% Gros Manseng and 40% Camaralet. Both varieties were de-stemmed with maceration on skins taking place for 12 hours. The grapes were then gently pressed with a pneumatic press before undergoing fermentation at controlled temperatures, with malolactic fermentation allowed for 20% of the blend. After fermentation, the wine was aged for 5 months on its lees to add texture and complexity before being bottled.
This dry white wine offers pronounced aromas of white peach and citrus, complemented by gentle spice notes. On the palate, it is round and supple, revealing intense exotic fruit flavours and subtle brioche hints, leading to a long, balanced finish.
