Dievole `Campinovi` Trebbiano Toscana IGT from Chianti Classico, Tuscany, Italy, is a certified organic, vegan, and vegetarian still white wine. This dry Trebbiano is crafted from grapes grown in Dievole's Campinovi vineyard, fermented in concrete vats with natural yeasts, then aged for 12 months in large, untoasted French, Tuscan oak, and chestnut barrels. It presents an intense and refined nose with nuances of citrus fruits, hay, honey, and vanilla. The palate is full-bodied, fresh, and elegant, offering savoury hints and gentle honeyed notes that lead to a long, generous finish. This complex and vibrant wine is an excellent accompaniment to poultry, lean fish, or mild and soft cheeses.

Vinification
After picking and pressing, the must was fermented in 75-hectolitre cement vats with natural yeasts, at a controlled maximum temperature of 18°C. The wine was racked into large, untoasted 41-hectolitre French oak barrels, where it remained for 12 months. From the 2019 vintage onwards, the wine also spent time ageing in Tuscan oak and chestnut barrels, bringing further elegance and balance to the final blend. A further 3 months of ageing in bottle occurred prior to release.
