David Moret `Le Grand A` Aligoté from Bouzeron, France is a still white, dry wine crafted from 60-year-old Aligoté vines. This impressive wine undergoes fermentation and 18 months of ageing on fine lees in used French oak, resulting in a beautifully concentrated expression. It offers bright citrus notes married with hints of nougat and toasted hazelnuts, balanced by vibrant fruit character and refreshing acidity. This versatile wine pairs wonderfully with lean fish, shellfish, and goat cheese.
75.0CL , 12.5% ABV
The grapes were brought to the winery, carefully sorted on the sorting table, and gently pressed. The harvest is then split between vessels: one-third of the harvest fermented in stainless steel tanks while the remaining two-thirds underwent fermentation in used French oak barriques. After fermentation, the wine was aged for 8 months in the same mix of stainless-steel and oak with regular lees stirring. It was then bottled without fining or filtration.
This concentrated white wine offers a vibrant fruit character, showcasing bright citrus notes intertwined with hints of nougat and toasted hazelnuts. It presents a beautiful balance of power, richness, and refreshing acidity that lingers on the finish.
Serve chilled at 12-14°C. No decanting needed.
