Dandelion Vineyards `Lion's Tooth` McLaren Vale, Australia is a captivating Red still wine, dry and crafted from a unique blend of Shiraz and Riesling. The Shiraz undergoes whole-bunch fermentation on Riesling skins, then ages for 18 months in French oak, creating a wine of remarkable depth. It offers enticing aromas of plum, spice, and blueberry, complemented by a bright minerality and hints of white chocolate and herbs. The palate is fruity, smooth, and savoury, leading to a long, balanced finish. This vegan and vegetarian-friendly wine pairs beautifully with roasted meats or mature cheeses.

Vinification
The Shiraz grapes were hand harvested and whole-bunch fermented with stalks, and placed in open fermenters to sit on top of Riesling skins for 11 days. The cap was hand plunged twice daily before being gently pressed into a mix of some new, but predominantly old French oak barriques to complete fermentation. The wine remained in barrel for 18 months before being racked and bottled without filtration or fining.
