Curatolo Arini Marsala Fine Marsala DOP, Marsala, Italy, is a superb White (Fortified) wine crafted from Grillo, Inzolia, and Catarratto grapes. This dry, full-bodied fortified wine undergoes traditional vinification, including soft pressing, controlled fermentation, and fortification with mistella and mosto cotto, followed by two years of ageing in Slavonian oak barrels. It offers an expressive profile with delicious dried citrus notes, toasted almonds, raisins, and vanilla, culminating in a harmonious palate. Perfectly enjoyed as an aperitif, it also pairs wonderfully with mature cheeses or various appetizers. This wine is certified vegan and vegetarian.

Vinification

For the base wine, the native varieties Grillo, Inzolia and Cataratto were soft pressed, before fermentation took place at controlled temperatures of 20-25°C. Alcohol, mistella (fresh grape must with added alcohol) and mosto cotto (concentrated fresh grape must which is traditionally "cooked" until it reduces to a third of its original volume) were then added to the base wine, raising the alcohol level, the desired sugar level, and the traditional flavours. The wine was then aged for two years in 500-litre Slavonian oak barrels.
