Cullen's `Grace Madeline` Wilyabrup Sauvignon Blanc/Semillon from Australia is a vibrant still white wine, crafted dry. This elegant blend of Sauvignon Blanc and Semillon undergoes significant ageing in new French oak, adding layers of complexity and depth. It presents a captivating aroma profile of citrus and pear, intertwined with intriguing notes of curry leaf, slate, and sea salt. The palate is lively and textured, offering bright acidity alongside elderflower, dried pear, and herbaceous hints. Vinification

The fruit was harvested in March 2023 between 6th and 12th March on the full moon fruit days and some flower and fruit days. The grapes underwent overnight skin contact to give the wine phenolic tension. A portion of the Sauvignon Blanc component was barrel fermented and another portion fermented in a concrete egg. The average time in oak for the Sauvignon Blanc was 8 months in 100% biodynamic puncheons, 85% of which were new. The Semillon component was tank fermented.

Flavour profile

This vibrant white wine offers a complex aromatic profile of citrus and pear, complemented by intriguing notes of curry leaf, slate, and sea salt. On the palate, it is lively and textured, revealing bright acidity alongside elderflower, dried pear, and further herbaceous hints, all balanced by subtle oak influence.

Serve chilled at 12-14°C; a brief decant may enhance its complexity.
