Cullen `Elvie Clarke` Wilyabrup Sauvignon Blanc/Semillon from Australia is a vibrant, dry white wine crafted from Sauvignon Blanc and Semillon grapes. This still wine undergoes natural fermentation with overnight skin contact, resulting in a wine of purity and depth without oak influence. The nose offers elderflower, jasmine, lemon, grapefruit, and passionfruit, while the palate is lively with zesty kaffir lime, kumquat, pink grapefruit, pear, and pink apple, showcasing unctuous juicy fruit and a pleasing texture. Certified organic, this natural wine is also vegan and vegetarian. It pairs beautifully with lean fish, shellfish, and poultry.

Vinification

All varieties were dry farmed and harvested by hand. Fruit was harvested between 1st and 10th February on biodynamic fruit and flower days. The crushed grapes were given overnight skin contact to create greater phenolic tension and palate depth. The wine was then fermented naturally and left without oak to be bottled with all the vibrancy of the vintage and purity of flavours.
