Château du Coing de St. Fiacre Monnières Saint-Fiacre from Muscadet Sèvre et Maine, France. This still, dry White wine, crafted from 100-year-old Melon de Bourgogne vines, undergoes an extended 42-month ageing period on its lees, resulting in remarkable depth. Fermented with indigenous yeasts, it reveals a complex bouquet of rich stone fruit and orange blossom, alongside a subtle toasty richness. The palate is full and structured, offering a distinct minerality and a long, buttery finish. This versatile wine pairs beautifully with shellfish or lean fish.

Vinification

Upon arrival at the winery, the grapes were gently pressed in a 2.5 tonne pneumatic press. Alcoholic fermentation took place in underground tanks and lasted two to three weeks, at a controlled temperature of 20°C. By law wines from the Monniéres Saint Fiacre Cru must stay on their lees for at least 17 months. However, this wine spent 42 months on its lees and is considerably more rich on the palate as a result.

This complex white wine offers a rich bouquet of stone fruit and orange blossom, complemented by a subtle toasty richness. The palate is full and structured, revealing a marked minerality and a long, buttery finish.
