Château de Chambert Cahors Malbec Cahors AOC, France is a still, dry red wine crafted from Malbec, Merlot, and Chardonnay grapes. This organic, vegan, and vegetarian-friendly estate, certified since 2012, ages its wine for 12 to 15 months in large 30-hectolitre French oak casks, allowing the fragrant fruit to shine. It presents a dark, intense colour with brooding black fruit character, intense violet and blackberry notes, and refined ripe fruit aromas of blueberry. The palate offers intense fruit flavours melded with gentle spice, balanced by lively acidity and silky, well-rounded tannins, culminating in a muscular yet elegant structure. This wine pairs wonderfully with rich meat dishes.

Vinification

Upon arrival at the winery, the grapes were sorted by hand and de-stemmed, then separated by parcel into individual tanks. After pressing in a pneumatic press, fermentation took place at controlled temperatures of 20-25°C with ambient yeasts and cap management, using very gentle pump-overs and plunging. The must spent 15-20 days on skins, with malolactic fermentation taking place in barrel, followed by maturation for 12 to 15 months in 30hl French oak casks, before bottling.

Flavour profile

This still, dry red wine offers a dark and intense colour, revealing refined aromas of blueberry, violet, and blackberry. On the palate, intense fruit flavours of black fruit are melded with gentle notes of spice from French oak, balanced by a lively acidity and silky, well-rounded tannins, culminating in a muscular yet elegant structure.

Serving recommendation

Serve at 16-18°C, decant for an hour to allow its complex aromas to unfold.
