Celler del Roure `Safrà` Valencia, Spain is a vibrant Red (still) wine, dry and crafted from indigenous Mandó and Arcos grapes. Fermented with native yeasts in stone lagars and stainless steel, incorporating 30% whole bunch, it then undergoes malolactic fermentation before ageing for six months in subterranean amphorae. This certified organic wine offers fresh, bright fruit aromas and a palate of crunchy red berry fruit with elegant tannins and a distinctive freshness. An authentic expression of traditional Valencian varieties, it pairs beautifully with poultry, pasta, or mild and soft cheeses.

The grapes were hand picked into 15kg crates, and partially destemmed before fermentation took place in stone lagars and stainless steel tanks using indigenous yeasts. 30% of the grapes remained as whole cluster in both cases. Malolcatic fermentation then took place before the wine was aged for 6 months in 2,800 litre subterranean amphorae (`tinajas`).
This vibrant Red wine, predominantly Mandó, offers fresh, bright fruit aromas. On the palate, expect crunchy red berry fruit complemented by elegant tannins and a distinctive purity, showcasing its authentic Valencian character.
Serve lightly chilled at 14-16°C to highlight its vibrant fruit and elegant tannins.
