Baron de Badassière Carignan Côtes de Thau IGP from France is a vibrant red, dry still wine crafted from 100% Carignan grapes. The vinification process involves a seven-day pre-fermentation maceration on skins to achieve its ruby, cherry red colour and berry flavours, followed by controlled fermentation with regular pumping over and no oak aging, ensuring purity of character. It offers fresh crushed cherries on the nose, leading to a palate bursting with blackberry, blueberry, and raspberry, culminating in a fresh and crisp finish. This versatile wine pairs beautifully with poultry, pasta dishes, or cured meats. This wine is suitable for both vegans and vegetarians.

The grapes were picked once they reached maturity at 12.5% potential alcohol. A pre-fermentation maceration on the skins took place for seven days to give a ruby, cherry red colour and berry flavours, followed by fermentation at controlled temperatures of between 17 and 24°C, with regular pumping over.
This vibrant red wine offers fresh crushed cherries on the nose, leading to a palate bursting with blackberry, blueberry, and raspberry, culminating in a fresh and crisp finish.
