Upon arrival at the winery, each of the grape varieties was fermented separately in stainless steel 10 tanks for up to 10 days at temperatures of 22°C-24°C using only indigenous yeasts. Post malolactic fermentation, the wine was aged in a combination of French (15%) and American (15%) oak barrels, and the remainder in stainless steel.
