Álvar de Dios, Aciano Castilla y León is an elegant red still dry wine crafted from 100% Tinta de Toro grapes. The wine is whole bunch fermented with indigenous yeasts before ageing for 12 months in oak foudres, followed by an additional six months in concrete. The nose is full of wild blackberries, herbaceous notes, and delicate floral aromas. On the palate, plentiful wild berry flavours are balanced by great structure and silky tannins, creating an elegant and distinctive style. This organic, vegan, and vegetarian wine pairs wonderfully with roasted meats or mature cheeses.

Vinification
Once harvested and transported to the winery, the grapes remained in whole bunches for fermentation. The wine was then aged for 12 months in large oak foudres, followed by a further 6 months in concrete before bottling without fining or filtration.
