Allegrini Valpolicella Valpolicella DOC from Italy is a vibrant red still wine, crafted dry from Corvina and Rondinella grapes. Hand-harvested and soft-pressed, it ferments in stainless steel, preserving its fresh character. This succulent Valpolicella offers lovely intensity of red cherry and plum fruit, lifted perfumes, and prominent notes of black pepper and aromatic herbs, all balanced by crisp acidity and a long, satisfying finish. It pairs beautifully with pasta dishes, cured meats, or mild cheeses. This wine is also suitable for vegans and vegetarians.

Vinification

The hand-harvested grapes were destemmed before going through a soft-pressing. Fermentation occurred at 25-31°C in temperature controlled stainless-steel tanks and lasted nine days. The wine was then held in stainless-steel tanks until bottling in mid-February, spending a further two months in bottle before release.
