Valdespino `Viña Macharnudo Alto` Barrel-Fermented Palomino Jerez DO, Spain; is a still, dry White (blanco) wine crafted from 100% Palomino grapes. Sourced from the highest point of the acclaimed Macharnudo Alto vineyard, the must is fermented in sherry casks and then aged on its fine lees for six months, achieving remarkable roundness and structure. This unique vinification imparts a delicate character of white stone-fruit, such as peach and apple, complemented by soft brioche and buttery notes. On the nose, expect delicate lime and mineral touches, leading to a dry and crisp finish on the palate. Certified organic, vegan, and vegetarian, this versatile wine is perfect with lean fish, poultry, or mild and soft cheeses.

Due to the high temperatures during the day, the grapes were hand picked at night to avoid stressing the bunches. Upon arrival at the winery, 75% of the grapes were destemmed and lightly crushed to obtain approximately 60% of the Yema (high quality must, exclusively used for this wine). The must was drained into sherry casks where the alcoholic fermentation took place over seven days. The resulting wine was left on its fine lees to achieve roundness and structure. The wine remained in casks for six months when it was then transferred to stainless steel tanks to settle ahead of fining and bottling.
