Trinity Hill Hawkes Bay Sauvignon Blanc from Hawkes Bay, New Zealand, is a superb still White wine. This dry Sauvignon Blanc is crafted from grapes gently pressed and fermented at cool temperatures in stainless steel, with a small portion aged in French oak for added complexity. It offers gentle aromas and flavours of lime, citrus, and stone fruit, complemented by a Sancerre-like texture, fresh acidity, and subtle fruit sweetness. This elegant and balanced wine pairs wonderfully with lean fish, shellfish, and goat cheese, making it a versatile choice for various occasions.

Vinification
The fruit was gently pressed to produce an elegant, fruit driven wine with low phenolics. The juice was fermented at cool temperatures in stainless steel tanks to retain fresh fruit characters. Most components received a minimum of six months of lees contact in tank. A small component (10%) was fermented and aged in small 228 litre barriques to add complexity to the final blend.
