Trinity Hill Pinot Noir from Hawkes Bay, New Zealand, is a delightful Red still dry wine crafted from 100% Pinot Noir grapes. A small portion of the fruit undergoes whole-bunch fermentation, contributing to its character. On the nose, primary aromas of fresh raspberry and cherry mingle with sweet spicy notes. The palate reveals soft, velvety tannins, with notes of plum and brambly spice, promising to develop complex forest-floor and earthy characters with bottle age. This elegant wine pairs beautifully with poultry dishes or mushroom-based cuisine.

Gentle handling of the fruit from harvesting through to fermentation helped retain the fresh primary fruit aromas typical of the variety. Each individual vineyard parcel was harvested separately with the fruit then destemmed prior to fermentation. Maturation in the tanks was for six months ahead of early bottling. A small portion of the fruit undergoes whole-bunch fermentation.
This elegant Red wine offers a delightful aromatic profile of fresh red berries and subtle spice. On the palate, it presents a harmonious balance of juicy fruit, delicate spice, and a smooth, velvety texture, promising further complexity with age.
Serve at 12-14°C; a light decant will enhance its delicate fruit and spice notes.
