Trinity Hill Hawkes Bay Chardonnay from Hawkes Bay, New Zealand, is a beautifully balanced dry white still wine. Crafted from Chardonnay grapes, the fruit is gently pressed and fermented with indigenous yeasts, undergoing full malolactic fermentation before ageing in French oak barrels and on yeast lees. This process imparts complexity and a rich, creamy texture. It offers fresh aromatics of citrus, grapefruit, and white flowers, complemented by roasted hazelnuts, almonds, and hints of gunflint on the palate. This elegant wine is a joy to drink.

Each vineyard was harvested separately, with the parcels gently pressed without crushing or destemming. Fermentations were carried out using cultured and indigenous yeast, in a combination of stainless steel tanks (70%) and 500-litre French oak puncheons (30%), the former preserving fruit flavour, the latter imparting complexity and texture. Malolactic fermentation was discouraged post-fermentation in order to enhance the freshness of the wine. Ageing on yeast lees for six months further enhanced complexity and mouthfeel.
This beautifully balanced Chardonnay offers fresh aromatics of citrus, grapefruit, and white flowers. On the palate, it reveals roasted hazelnuts, almonds, and a hint of gunflint, all culminating in a rich, creamy finish.
Serve chilled at 10-12°C. No decanting needed.
